My Girlfriend gave me half a kg of whitebait for my birthday. Need pattie recipes asap so I can munch on some fishy goodness.

Seriously, beat a couple of eggs, add about 1tbsp flour just to bind it, salt and pepper, then stir in whitebait.
Cook over medium heat in a little butter (or oil, but butter is best) till golden brown.Turn and cook the other side too... Mmmmm
Enjoy...lucky bastard....

Of course. You will need a VERY sharp knife.
Oh...and small too.

PS...You might be best using a razor blade...it's very fiddly, but worth it.

Cook over medium heat in a little butter (or oil, but butter is best) till golden brown.Butter AND oil is the shiz. Put oil in first and heat it, add the same amount of butter, wait until it stops foaming, and slosh it around a bit, then in go the dollops of batter.

Gah, thats just too yummy to contemplate. :pinch:

edit: for something different, try draining them and tossing in flour and then just fry them in hot oil/butter until almost crispy.

Also, Omelette them - 2 eggs whisked, butter and a light sprinkle of chicken salt in hot pan, in goes egg mixture, do omelette stir, hiff 'bait in, flip closed, heat through.. eat with parsely garnish and tomato pieces.

Heres what you do......walk carefull over towards the kitchen rubbish bin, apply pressure on the opener with you foot and place said 'river nothingness' into bin, removed foot and walk away...:rockon:

beat the hell out of the eggs...
makes the batter nice and fluffy.
dont add to much flour.....

If you need a hand to eat these things..

With whitebait fritters, either add a little garlic to the butter that goes in the pan or grease the pan with a cut clove.

A little fresh lemon juice squeezed atop prior to eating also adds a bit of zing to them.

and yet some people can take it or leave it....
tell ya what i did have on xmas day..
tiger prawns/ lightly done on the barby.
then covered in lime juice,, garlic and just a tad of chilli..
they were nice.. dont go overboard on the chilli.............
