Adobe illustrator gurus

Hi all, anyone brilliant with Adobe illustrator, trying to convert a jpeg into a AI file.........dont that but cant get the original color into the image.

as well as a few other things


Been waiting for 3 months for a course on Illustrator but no one else is doing it so it keeps getting canned.

Any help appreciated, will travel to see anyone
