Zipper finally broke after years of use on my current leather jacket and have decided to finally get a new one to fit my body type. Which is reasonably broad shoulders with a very slim waist, 5'11". Apparently it's impossible to find said jacket as they all tend to billow out at the waist so that I look like a parachute(it's the same for all clothing, unless I get them specially tailor made, although can't really afford to spend $700 on a tailor made leather jacket at the moment).
Anyone know a particular brand or shop that can help?

Easy peazy, a custom wont cost that much, we can do one nearer $500 for you in any of our styles.
Most of our waists are adustable anyway, and are made to fit tight around the wasit as I hate airflow up the jacket and like good fit to the pants.
Come see us

I have a fieldsheer ( I think ) from california via Trademe. Excellent quality & fits primo. I'm 6'2", stick thin, long arms & broad shoulders. The jacket fits like a tailor made one.

Dainese Racing Pelle is a good jacket if you are tall and slim, fits me 100% perfectly. Most other jackets I tried either were to baggy or arm length to short etc.

Nobody's mentioned that if you've had a looksie, and you fancy a particular jacket but it just doesn't fit right in some places, you can still have the jacket altered and still get the design you are smitten for.
Generally speaking Dainese tend to fit very slim, tall guys with broad shoulders and long arms. But with a budget below $700 most dainese stuff will probably be out of your range (but look out for any sales anyway)
Also the more classic leather jackets should be a more relaxed fit (not like sports jackets) and so it's easier to fit one because all you need to worry about is making sure the armour is sitting correctly, and the waist/chest will be more relaxed. so if that style appeals to you, that might open up your options.
