Is it possible to damage the ignition coil by putting the wrong spark plugs in? What if the engine runs perfectly fine after the 'wrong' spark plugs have been put in?

First question: No, not as far as I know.
Second question: Generally spark plugs are rated by "temperature" - hot or cold. Too cold and they oil up and get all manky and don't usually go so well. Too hot and you might end up with a hole in a piston...

Too wide a gap will require more Kv to fire the plug, this may reach or exceed the coils capacity, and the coil will draw more current.
