Up til now have been covering the North Island on my 250, as of the end of the month I'll be flying down to Christchurch to pick up a GZ1200 (94 Kawasaki Voyager) and bring it back to Auckland.
What should I stock up on for planned regular touring once I have it?
So far have
tie-downs
ropes
a puncture repair kit
spare set of gear (for passengers/hitchhikers)
bungy cords
3.5mm tape (for music)
Plan to get a 12V compressor and add my screwdriver and pliers to the kit.
Anything vital I'm omitting?

I'd skip the spare set of gear, if you mean you'll carry it at all times. Make sure your set of gear you're wearing/carrying handles all conditions, wet weather gear etc.
Tie downs are handy for tying down gear, the bike on vehicles/boats, and even an emergency tow rope. Puncture repair kit is an absolute must.
Consider a small first aid kit, and if you're doing a lot of riding, perhaps a PLB (personal locator beacon) for safety. AA Plus membership is also handy should the bike break down.

Depends what you're planning on doing to the hitchhikers you pick up.

The 12v compressor is, in my opinion anyway, a must.
The only time I had a puncture miles from anywhere, I only had the compressed CO2 cylinders available. Not enough, specially as I fixed the wrong "hole" first...:whistle: With a compressor you can at least find the friggin hole for a start and don't end up poking a new one through a perfectly sound tyre wall...
Then you have enough grunt to pump the tyre up to proper pressure once fixed.
I got mine from SCA - "SCA Thunder" is the model. Carry it in the tail bag at all times. Currently selling at $75 but I got mine on a sale weekend for around $50. Well worth the hassle.
