I had a GB & I tihnk it would a better bet to get an old SR or similar & widen the scope of your project. GBs are getting pretty good money nowadays whereas the SRs are cheap as chips & you can do great things with them as per DEM etc. I saw one down here on TM for about $1300.
As for an airhead under $2K you'd have to be very very lucky cos there are so many airhead fans out there that know the appeal & value of them. In saying that I have a bike build over on adv rider (where posting pics isn't a problem) that I bought for bugger all & there are currently a lot of cool people helping me get it back together.
Voltaire bought a R65 for $1100 recently which was a steal.
Unless you really really want spokes, there are heaps of bikes to cafe, but as usual you'll get the cocks moaning that you shouldn't mess up a factory bike blah blah blah
Make sure you do a build thread & i take it you are aware of the pipeline site etc
Actually CX500s are very cool & can easily end up looking like guzzi cafes

GB4/500s already cafe'd from the factory.? All the 'custom' ones I've seen just look like stupid bastardisations of the original item.
