I too believe 1300cc cars, (I don't care how light it is), are not sufficiently powered. 2600cc is good though...ie, a Busa motor for the front wheels, and one for the back wheels. THEN, you're gonna get done for noise ordinance issues too, when you break through the sound barrier like!

I want to make a old school mini rear wheel drive with a turbo hayabusa engine in it. That would make a good track day car.

The gear boxes in the busa don't like turbos when you give them a bit of weight to carry. Ask the guy who built "quadzilla". Don't think he ever completed a run up the hill climb.

What gear box do they use with those v8 motorbike engines?

You mean the 'Boss Hoss'? Nothing in the conventional motorcycle sense.
