Time in the saddle aint a problem - At Phillip Island the GSXR750s burn 4 tanks of gas per DAY of coaching... think its around 600ks per day. Making my F3 bike run for an hour and then finding a superbike and all the tyres required is the tough one!

A hot shot CSS Coach wouldn't use up a Tyre in 3 hours surely ;)
So you only need 2. Oh, and why do you need a Superbike?
A 600 is pretty close with the right rider :)
Actually...... thinking about it, it would be 3 laps an hour difference between a 1000 and 600 using my dodgy maths...
So a Superbike might be the way to go.... But none of us are robots, and it is an enduro, so 65 seconds vs 68 second laps for 3 hours would be nigh on impossible.

How would you work the classes? If I remember you did the smaller bikes for the one hour, and over 400cc for the three hour at the last endurance races, I may be wrong. What's the format?

I would say F3 bikes would have to be NOT in the class that has 600/1000s in it, speed diff will be too great. Was it 250/400/650 twins in the 1 hour and 600 and up in the 3 hour last time??

I think you are correct on both counts....
Abby won on her 450 in the last 1 Hr I did...
We (Josh and Myself) got 2nd 250... To Jaden and Aaron.......
