ok, its been a fairly grim winter in my neck of the woods..pretty cold and due to my receeded workload
its been a bit tight as far as money goes too, add to that a week long flu and i got to thinking about
soups..being cheap, tasty,hearty, good for body and soul blah blah blah
so ive been making one soup a week..firstly two chicken soups, last week a bacon hock job
and today another chicken! i know this isnt exactly breaking news but i just cant get over how
cheap and tasty these things are..anyway heres the drill for todays soup, went to the mad butcher
and got a bag of 6 chicken frames which will do two soups for $2, then a carrot an onion, a celery
and a packet of kings soup mix (country chicken) for about $7 from the supermarket
once home, out with the big pot..chop the veges add to pot with soup mix, 3 chicken frames
sea salt, black pepper, one chicken stock cube (and the kings mix has stock in it also)
some two minute noodles (minus the flavour sachet) and 2.5 litres of water
cover with lid, bring to the boil and drop it to a low simmer for another 2 and a half hours
it took all of 5mins to get it on the stove and now its simmering and the whole house
smells of hearty winter soup!
only other thing to mention is aparantly you should put the whole pot in the fridge once
youve eaten from it and its cooled down..rather than leave it on the stove for days
t room temp like i did first time...basic chicken sense huh ;)
no such probs with a bacon bone soup or similar though........
im getting between 12 and 20 servings from one of these so it makes for cheap eating
and im pretty sure im losing weight hehe
p.s. dont forget the hearty bread rolls!
