Can anyone recommend an auckland based fabricator to help with fabricating my seat pan, tabs and hidden oil tank for my cafe racer project.

a couple spring to mind, however the better question is what is your budget?
before contacting a fabricator as most are not cheap.

you have already done templates, change those into wooden bucks and have
a crack yourself if you want to do it in light gauge alloy..
