Is the bike red or blue, or another colour? Red bikes are easiest to fix, hence a shorter time for a quote. Blue bikes are on the opposite end of the scale, and everything else is somewhere in between. If the bike is red and blue, then the 2 cancel each other out and you'll have to wait like 6 million years for a quote.

What is the longest you would wait for a shop to give you a quote?

Depends a bit on your approach. I'd work on the theory of taking bike brand X to dealer or workshop that deals with brand X and unless it's something very unusual I'd normally have a quote for repairs same or next working day.
