I am after either some stainless or aluminimum sheet to fab a hanger piece for my skid plate - need a piece 80mm x 250mm (not sure on thickness at this point). Short of diving into the scraps bin of an engineering shop, does anyone have any suggestions for online suppliers? Most of the stuff I can find, looks to be model/hoby grade and is thinner than I was after.

Your other option is to try a refuse station or a scrap metal dealer.
People that build jet boats often waste a lot of material due to hull shapes

or look for a buggered road works sign lying in the grass

Some of the hobby machinists I follow use this place
https://www.pcbway.com/rapid-prototyping/manufacture/?type=3
Prob far cheaper to turn up at any local workshop with box of beer on a Thurs or Fri arvo.

Thanks for the suggestions everyone. Should have thought of trademe first! But it also turns out there are a couple scrap dealers around the corner from me. Some say they don't sell stuff to the public, but the other might - and it looks like they will also take the bike battery that has been sitting in the garage for I don't know how long

Might not too. I'd traded with them through two shifts of premises and was on first name terms....
Then during the pandemic they decided to sell electronically and deliver only by courier.
Living out of town this fucked me up badly.
Went back once post pandemic and they were still insisting on zero physical contact.
Went elsewhere but would now have to start from scratch again.
Make friends with a local sheetmetal company. They'll love you if you're paying better than scrap price for their rubbish.
