Thought I just post this here. If one was interested in old Suzuki Parts ( Principally T500) is there a good site to use? or for that matter one to avoid? or is e-bay and trademe my only options?

Depends what you want. Cosmetics are difficult. Ebay or possibly a dedicated forum.
Engine parts still crop up. I did a T500 engine for a car back in the early 2000's and found NOS pistons.
Doubt if they'd still be around - and at that time Wiseco wouldn't do a piston order.

I am after the weird sized stuff that would be a pain to get in from overseas. So am hoping to avoid that.

I USE ALPHA SPORTS to see availability, i've also got a very good parts cross reference programme which will tell model fitments too.

I have been ordering from all over the world and the only problem I have with buying is getting people to freight to NZ.
In terms of searching tho you need to be very patient and try from different angles. For instance if on ebay, you can change the country you appear to be searching for and get different results.
if searching on google, or in general, you will get different results depending on terminology, and part numbers with or without full stops or hyphens will give different results. I have a guy in the UK that can find things on ebay that I cannot, so bear that in mind.
T500 is a relatively common bike so you will get just about anything with patience, I would have thought…although price may be offputting from time to time.
Good luck tho, that is a bike worth restoring IMO.

for searching ebay they put in filters to exclude a lot of SH parts
I find Pickclick good for searching ebay at least.

https://picclick.com/If you set up a delivery address in the country where you are searching, eg USA for ebay.com, then it will find more parts. If you have a freight forwarder account, use that address.
