I have a think thing that happened in my head. I like cake. I like make cake. My cake I like the mostest is not the cake I make with my toeses! Yes dear fiend of cake a whimsy of bake this thread is... not birthday's only or times of celebratory prose, cake for eat when they let be eaten cake.

What you fav. cake? My like is calleded a Hummingbird cake... has fruit like apples and quince - never found a recipe but found at Brown Sugar Cafe in Taihape....

Say what will you and post recipes too!

My fav cake to make is Chocolate Cake with a thick layer Mock White icing in the middle, and Chocolate Icing on top, sprinkled with Chocolate Flakes or M&Ms (I have kids!) so yummmy! :2thumbsup

damn now I'm hungry. :(

I don't really have a favorite, pretty much all cake is good cake. Then I read this description, we may have a winner.

cake for the win... and omg, my friend's vegan chocolate cake is the best in the world!! ... (psst you can use normal chocolate, but it doesnt have milk or eggs, hence why we call it vegan, but it wasnt actually made with vegans in mind) but HOLY CRAP ITS GOOD!!

Hummingbird Cake

Ingredients
450g can crushed pineapple in heavy syrup
1 cup plain flour
1/2 cup self raising flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1 cup firmly packed brown sugar
1/2 cup coconut
1 cup Mashed banana
2 eggs lightly beaten
3/4 cup vegetable oil

Directions:
Preheat oven to 180 C.
Line 20cm cake pan with baking paper. Drain pineapple well, reserve 1/4 cup of syrup. Sift both flours, soda, cinnamon and ginger into a large bowl. Stir in the sugar and coconut. Add pineapple, reserved syrup, banana, eggs and oil and mix until well combined. Pour into pan.
Bake for 1 hour. Cover with foil if over browning.

Ice with lemon cream cheese frosting when cold.


Lemon Cream Cheese Frosting
Ingredients:
115 g cream cheese
55 g unsalted butter, softened
120 g confectioners' sugar
30 ml lemon juice
270 g confectioners' sugar
4 drops yellow food colouring

Directions:
1. Beat cream cheese and butter in a bowl until combined. Beat in powdered sugar and lemon juice.
2. Beat in 2-1/4 to 2-1/2 cups more of powdered sugar till frosting is of spreading consistency. Stir in a few drops of yellow food colouring.

I make twice recipe - for much cake is good...

My wife has a killer cake recipie, secret but includes a double shot espresso and a pot of strawberry yoghurt! Also, mmmm, backed cheesecake. Orange cake. Oh soooo many!

They have three layers; a sponge base, a layer of orange jelly and a layer of chocolate covering the jelly and the margin of the sponge.

We used to get Mallowpuffs sent to us in the UK. Jaffa Cakes were a poor substitute. Too sugary to actually be able to taste the chocolate.

It's got to be Devil's Food Cake. You've got to nuke it for 30 seconds then lather it in cream so the icing goes all gooey :drool:
