A couple of years ago I had the seat on my old Kawasaki twin (since sold it)reshaped and covered by Auto & Marine Upholstery at 369 Tuam St (37750406). The guy is (if he is still owner) a car nut and does a lot of old American cars and customs as well as boats. Excellent work and very well priced.

Yeah, I know a guy, owns his own business. Best known for his custom oilskin riding gear he makes to fit including bags etc, but does all leather work. Did a beaut job on my fathers reshaped seat and has plenty of seats waiting in line whenever I go round to see him. Names James, charges really fair too. let me know if you want his number?
