Run the engine until it is warm. Then switch off. Position a suitable container under the crankcase and remove the drain bolt. They are usually 17mm. when the drips stop, replace the bolt. At this point, it would be a good idea to replace the filter, especially if it's not been done last oil change. The filter may be a screw-on external cartridge, or it may be an internal one behind a plate towards the front of the crankcase....
As far as correct amount of oil is concerned, either duplicate the amount you drained out, or check beside the filler bung...it is often stamped there. Say, 2300ml???

It seems the drain bolt is a little unusual on these motors...
...the bolt is on the left side, not the bottom. It is just to the rear of the top of the kickstand and has a phillip´s head screw in the middle of it.....

The other thing to do re amount of oil is to use the view window on the right side. Put in say 1.5 - 1.8 litres, then stand bike upright and trickle in more oil until it's at the right level in the window.

Here's the filter http://www.alibaba.com/product-gs/200526065/Oil_Filter_4XT_13440_91_for_VIRAGO_250_XT600_XV125 .html - it is an internal type so you will need to find the plate it sits behind and remove that. Watch out for springs and stuff when the plate is released.

if you have a owners manual, it should say exactly the filter type and how much oil to put in as well as recommended viscosity
