Do you need to be on a 250cc (or smaller) bike while sitting your full licence test?

Yes, unless you have a letter from the LTNZ giving you permission.

Ok. I have been told that during a full licence test (and only for the test, not the ride there) you can use a bigger bike, just like you can sit a full car licence test in a manual even if your restricted says you can only drive an auto.

So for the ride there you will use your 250, then somehow morf a bigger bike to the testing office to use for the test?

On your restricted license, you can only ride a 250 or less, unless you have an exemption.

Therefore, until you gain your full license, you may only ride a 250 or less... ergo, no, you can only ride a 250 or less.

I'm pretty sure none of the car licences (learners/restricted/full) says whether it's for manual or auto. You can take all your tests in an auto then drive a manual.
