Probably h.264 or some such variant.
Get the app called gspot and it will tell you exactly what codec was used for any media file.

You need to purchase a tool to do it, unless you were using Linux, then you just build fmpeg with the required codecs and it just works.

Don't be silly, there is a multitude of free and very powerful tools for re-encoding files. If its full of DRM then there are simple ways around that as well.

If you've been purchasing songs from the iTunes music store, you may encounter problems with DRM controlled files.
The easiest way around the DRM is to create a playlist of the music you want in iTunes and then ask iTunes to burn the playlist onto an audio CD. You can then reimport the music from the CD into your movie editing software.

Here's another tip.
Try m4a to mp3 converter, which batch processes itunes files into mp3s.
