under a hundy bucks for 3.5" screen with color camera, or more if you need more res or bigger screen..... whats the project?

Sure. I guess I'll buy the cheapest handycam I can find and about a kilometer of elec wire haha. Only problem I can think of is the different conductivity of the extra wire (different materials)? Maybe that would affect it?

I wasn't talking about using a 52inch Plasma screen.. LOL

I shouldn't say, but I'll post an interesting video if I finish it... So those screens run on their own power, and you could possibly run a cord from a regular cam to this monitor without too many complications? I don't suppose they are on the net, link anywhere?

would it be possible to remove the screen from the handycams you see around, and extend the wires via donors, and still make it work providing the wires are hooked up to the correct ones?

Nah. Those "wires" are normally tiny flexible printed circuit thingys, and are impossibly fragile and infeasible to solder.
