With whitebait fritters, either add a little garlic to the butter that goes in the pan or grease the pan with a cut clove.

A little fresh lemon juice squeezed atop prior to eating also adds a bit of zing to them.

H,some things just shouldnt be messed with.

Mind you like the roads up there compared to ours in paradise your Whitebaits probably a little lacking.

you blokes are making me homesick just thinking about the things..
Whitebait are up there with crayfish,,
and yet some people can take it or leave it....
tell ya what i did have on xmas day..
tiger prawns/ lightly done on the barby.
then covered in lime juice,, garlic and just a tad of chilli..
they were nice.. dont go overboard on the chilli.............
