It's not what goes in them, it's who makes them

pepper steak is my favourite as well as sheperds pie

Adding cheese to a pie just spoils it

Agree with Jim, ingredients mean nothing - it's all in the making.

I found the world's best chicken pie once and only once. It was a small delicatessen at Paraparaumu Beach about 7 or 8 years ago and appeared to be run by a couple of homosexual gentlemen. The next time I went back the place had closed down It had a creamy peppery sauce with no sign of gelatine and a smattering of prime cooked & diced chicken breast. Simply exquisite!

    I'm hungry now.

ingredients do play some part for instance I don't care how well made a mussel or fish pie is I still don't like it. Mix your fav flavor with best maker you got a winner.

Just don't ask how that creamy sauce was made

It is possible to overdo a pie.

IMHO I think a pie is good working kai. It's not delicatessen food. Too many chefs bugger about with a pie trying to get 1001 flavours into it.

The best is simple pastry, Good quality meat, cheese and not too much. You've got to have gravy. Not too salty or peppery.

Mmmmh pie (Licks gravy off chin)

I don't get cheese in a pie. The pastry has enough buttery goodness to give Kate Moss a coronary so why put more slippery lard inside...?

If it needs lubrication get some sauce, bottle of sprite, or a pint.
