...some kind of shielding that makes levitation at odd angles and high speed an optional feature...would be something I would insist on..

Sorry to go OT, but go for fit, leather thickness and quality, seam stitching, CE armour is nice, pants that zip to the jacket, removable winter lining, quality zips.
Qmoto can custom make you anything you like. If you like elbow sliders, they'll do it. If you want perforated leather, they'll do it. Colours, whatever you want.
The specs you should look for would depend on what purpose you are using the leathers for.
eg. For racing you would look for one piece, hard armour, close fit, no external pockets, breathing perforations etc.
For touring you do want external pockets, a loose fit so that you can wear additional layers underneath, no breathing perforations so that it can be waterproofed, soft armour or sacrificial pads (your choice).
For commuting you probably want two piece with perforations or even vents.
In all cases look at the zips, the stitching, the type of hide its made from, the thickness of the leather etc.
Work out just what use it will get then decide what features you need to look for.
