Lacing 'em up is okay, I've done countless push bikes and a few vintage rims.
I might leave it be for now, unless a tasty set pops up for reasonable $$ (yeah right)
Yep do it. All that shit is a piece of piss if u live in the States. But we don't. There are companies that will make spokes to suit if required over there. You will be able to purchase the rims new on the net. Dirt bike (old school name) shops should have good access to rim suppliers.
you may also find that certain rims are set up to be slightly offset from one side,to allow for brake discs, chain lines,shaft drives and so on

He's the only one I've got.
So all you do is measure the offset of the std wheels in the bike. If the rims are wider then subtract 1/2 the extra width. Simple biker math.
You can then build the wheel till it is almost straight, fire it in the sw or forks & move the rim to where it should be. Loosen every 2nd spoke (the ones on the other side) & every other spoke (all the ones on the side you want to move towards. Peeasy.
Haven't dine this since, well last night actually as I'm upsizing the front rim on my bucket wets.
By far thet huge majority of bikes will have the front in the centre of the forks & the rear will be dead in line. Some Nortons had a queer setup due to a ridiculous compromise, but you're into 40 spokes per wheel with 4 different lengths & other silliness that most sensible manufacturers ignored (yes I know old Kawis ran 40).
Big thing to remember is to separate the inner & outer spokes when pulling apart & build the wheel with inners first. Take a pic but pretty obvious.
