My son has just moved to Queenstown and looking for local knowledge when it comes to a bike shop for repairs, maintenance and tyres for Honda Hornet 600.
Who would you recommend? ( or who would you steer clear of probably more important).

Third that. We stopped in there in February on a road trip. Fantastic place to visit
You only need two tools in life:
Duct tape if it moves and it shouldn't.
WD-40 if it doesn't move and it should.
Brute force and ignorance always prevails.
Failure comes from too little brute force, or
too little ignorance.
