Relocate your cafe to an area after a couple of km of twisties, then all the sprots bikes of the group will arrive and let you know that the cruisers are +30mins away

There's the issue. It isn't a cafe, its an historical shop. You know the type of place where you can by wicks for your tilly lamp, or fly paper to hang from the ceiling? Pies are only a convenience for the shoppers.

But that is what I would struggle with, kicking them out of the store in a manner that wont get me arrested.

The store still has the right to ask them to leave and therefore trespass them, no violence required. If they start something then you have the right of defence. Just as long as any other shop in the area also gets the hint and refuses them then they will learn quick smart to mind their Ps & Qs.

Too often arrogant cunts get their way because of this "customer always right" shit, like the cunt that take a dozen or more items through the 10 or less queue or the prick that complained about a T-shirt a passenger was wearing on an aircraft.

You're right. 200% is no where near the usual profit margin for food. Most bakeries have margins of 400%. I was meaning profit margin for individual items. Rent etc comes out of profits. If you bake your own. A 20 pie tray shouldnt cost anymore than $15 to make. each pie has shit all meat in it. Never prime cut and pastry is cheap and easy to make. How many bakeries have you worked in? How many family members own bakeries?

My mate owns Couplands if that helps - and where I work runs regular kiosk's for guests - to buy a decent pie from our supplier costs us $1.64 plus GST and that is priced on a national contract rate.

So to get your at least 200% profit we must charge $5.66 or more and to get your 400% profit $9.45

I can buy a big ben pie from the dairy for $1.50. They can make a pie and deliver it to a dairy at a low enough cost that the dairy can make a profit selling me a pie at $1.50.

If you can't make a pie for under a dollar and sell it for $4-5 then i don't know whats wrong with your shop.

ummmm profit margin or net profit is actually calculated after cost of goods, expenses and other associated costs are taken out ................Net profit = cost of goods - SG&A or sales general and administration - interest taxes an depreciation. Commonly called EBITDA. You could mean gross margin, this is sales - cost of goods
You are incorrect in quoting profit margin, I find it very hard to believe that it would be 400% EBITDA

Actually our P&L carries all costs down to Gross profit (including wages, cost of sales, operating costs, R&M, administration, marketing and energy to get the gross profit and then after this comes off external fees (franchise/ incentive etc) Insurance and Rates to give Net Profit EBITDA then off comes depreciation to give Net Profit before Tax

Go to a dairy. Go to the warmer. Pull out a big ben pie. $1.50. The 400% mark up is the cafes and bakeries who make pies from scratch at a cost of $1 each. Puts them in the warmer for $5. Most bakeries charge around the $4-5 mark for a pie.

And how does THAT post relate to Kiwi cowboys original post. The store in question is an historic general store. The nearest business that sells pies (apart from the pub across the road) is 20 km's away.

And the pies there are better quality that those road kill big ben pies. If you eat (and like) them ... it explains a lot.

Their location is within 5 km's of the site of the most (In)famous motorcycle rally sites. Bikers that have attended bring their mates to the area to show them the site. It's position in the Ida valley gives it an ideal location for bikes. Try visiting some time.

The pies are generally in the freezer so it takes awhile.

yep a ice doesn't respond to microwaving so that's why when you defrost semething it goes in pulses first to thaw something out then let that 'hot' water content warm up the rest.

We bought a 6 pack once on special and just about needed a dentist afterwards from the small bone chips in them.
