    When my home wine supply is getting down a bit there are two main types of bottle remaining: ones with corks, and pinot noir. I'm not a particular fan of pinot and since it usually carries a premium price I normally don't bother, sometimes though it comes in mixed dozens. For a year or two I had been avoiding a Tasmanian pinot because
    a) it's pinot and
    b) Tasmania?

    It turned out to be as nice a pinot as i've ever had. Riversdale Estate, Centaurus, from the Coal River Valey. None of which I've ever heard of, but which I will remember kindly. There is apparently a major radio telescope near the vinyard and the wine is named after a constellation. Who knew?

    There was a guy came to NZ all the way from Grant's distillery to tell us how to drink the stuff. He said to add 1/4 to 1/3 the volume of water. Drunk straight the whisky overpowers the palate. Adding a little water makes it so you can taste it and it releases the bouquet. He also said never add ice, that just makes the initial problem worse.

    quite fucking right. whiskey should be watered between 5:1 and 3:1 to expand the aromatics. ice is a no-no as that wil lock up the flavours and then dilute more and more as it melts. any other "mixer" is for shit liqour or teenagers. typically shoot for 32% in the glass.

    same as absynthe. usually 5:1 or greater. ideally get it down to 13-20%
