so basically my plan is to put the GSXR engine in the better of the two GSX frames, and make a few "adjustments" here and there, and the other frame will keep it's number matching engine with some parts from the other one, and I will restore it to original (another concept younger me would kill me for). So, basically, I may need a lot of advice, and I have a LOT of parts to sell (2x pairs of wheels, an 80% complete gsx750 engine, gsx forks and brakes, lights, indicators, fairings, switches, etc etc etc). So any help with anything will be greatly appreciated.

Heyya, I'm not sure if you will still be around after the not so helpful welcome you got. Occasionally conversations about motorcycles have been known to break out around here.
I took time to read your "not that long" post. My thoughts are it would be a lot easier to get the steering stop fixed on the GSXR frame and leave the motor in it. Yes, it will cost $$$ to re-register it, but you will get to have an iconic motorcycle that is only ever going to increase in value as it gets older. If it were me, I'd sell the other two bikes, either as spares or going concerns if possible, and sink the money into the GSXR.
