    Thanks Bb. To be honest, I did try to make it about 5 years ago but it was bloody awful so we biffed it and had cheese on toast instead.

    Make a kedgeree. Then stuff half a capsicum with it and then some grated cheese on top and pop in the oven or under the grill...

    A wee thought for Kedgetaireens who go fishing and can smoke stuff.

    If you catch white fish keep the bones, head etc and smoke them. Then make a fish stock. Smoke a fillet or two and set aside.

    Use the smoky fish stock for a risotto, same ingredients as kedgeree but a risotto. Oh, arborio rice or similar, not long grain.

    Finish with the flaked smoked fillets, grated boiled egg and herbs.

    It's not healthier than using cream, should have tons of butter in a risotto, but much tastier.

    Jeepers! Haven't used my smoker in the 20 years since we left Twizel. I am going fishing in a couple of weeks though ...
