I put Unix on my iPod for a while, and was running it as a dual OS iPod, which was pretty damn cool. But it was quite buggy (no, not me), and had a few issues, so I took it off in the end, which was a shame, cos it get the iPod so much more function. But Unix didn't support my remote, the pics you could load onscreen (and maps) started off ok, but as they loaded, they got either brighter or darker (can't remember which) to the point that you couldn't see the image once it had loaded.. The text files were good (I have a 2g) and the extra games were kinda cool, but took ages to load.

Good idea, needs a lot of work..
