The most likely place for the first encounter with ice or snow is on the Dersert Road just south of Rangipo. Next is between Waiouru and Taihape. From here the roads are likely to remain clear until you reach the Pig Route.
Just ride sensibly, and treat any shaded spots as potential frosty areas and you should be OK.
