I just bought a new YZ250, and the guy said he ran it at 30:1. This sounds quite rich. Is this the correct ratio?? I normally run my bikes at 50:1, with castrol TTS.

Not sure. Im running the RM at 30:1 thats what the last guy said he ran it at and it seems to go fine.
Best bet would be to get a manual and have a look I guess

I'm running 40:1, using Motul 800. '01 CR250R, also have a mate running the same in a '99 YZ250. Using a good oil you can go leaner, if your using a cheap oil - dont.
Have run it at 50:1 in the past, but for the sake of a little smoke trail (which smells nice from the Motul), I run with the 40:1 and even add an extra dollop from time to time.
I ran my YZ at 40:1 also.

yeah 40:1 is the go. manual says 32:1 for a RM250. Motul 800 is the best oil too (so I've been told)
I am in the 32 to 1 camp, ( cr250 ) But I move up and down depending on the mixture I require
add/subtracting oil is a great way of jetting. So you can fine tune the jetting
