If it's music, Foobar is my favorite.

    Videos: VLC.

Everyone hates it due to some really bad releases but I use and I am very happy with Real Player SP.

It will download any Internet video and also convert it for you to a more usable format.

+1 - Recently put that on my Linux box, seems reasonably good, but use Rhythymbox for internet radio.

Seconded. Winamp is def the most powerful. With enough plug-ins to drain the national grid.
New version with in-built auto crossfader (up to 20sec), and auto-shade (Friggin invisible). But takes a while to load.
Most important feature (since day one) was the fact you can add files or folders or even folders within folders with relative ease - key for me as I just add "E:Music" and it sucks in all songs in all subfolders in about 30 sec (not bad for 220GB of music).
Started using in way back in 96......and never looked back. Tried others - but nothing else comes close in my mind.

Vidoes in VLC cos its lite cute and as in-depth as you want to use it.
