    Whitebait fritters The best ever recipe.

    Just read the steak recipe. That was pretty good. I get to eat some of this fancy food and while it tasts good I do miss the plain old fashioned cooking.

    I've posted on the Guy Fawkes thread and it bought back memories of whitebait fritters.

    So here's my best recipe ever for them. Enjoy

    Eggs must be free range.

    Whitebait.

    Smoked salt.

    Most people use butter in a skillet and if you are unable to get the smoked salt do this but if you can get some smoked salt then use oil. The best that you can afford. If you are not too sure on this make sure that the oil is in a glass container and not plastic. I never use oil in a plastic container.

    Mix whitebait and with beaten eggs and ladle out into hot oil/butter. Add pinch of smoked salt and flip over. Remove when cooked.

    Serve with aerated lime H2Go mineral water.

    That recipe sounds more like a whitebait omelette to me. I alternate between omelettr & fritter for variety. Been catching & eating them since I was a kid (in the late 50's).
    If you have greedy freeloading visitors that only visit when you have whitebait make sure you cook them in a butter / cream mix. It makes them so rich they can't eat many.

    Had so much of it growing up in Hokitika in the 70s Mum would dig it into the vege garden...perhaps not nowadays

    I went whitebaiting once. Caught 7 of them in 6 hours.
    Fuck that was a small fritter - I had to throw out 7/8ths of an egg. Please don't tell the starving Ethiopians.

    Matey turned up with whitebait for our fireworks extravaganza. They were still twitching as I ladelled their sorry arses onto the BBQ I shit you not. Beautiful!!
