585 is the outside diameter in millimetres of the tyre when fitted to the correct rim. It's another way of indicating the aspect ratio but makes it easier when switching tyres to determine any gearing changes that may be needed due to differing tyre dimensions.
I'm not too sure. I used to fit them to really skinny RG50 rims but did used to have chicken strips so they probably needed wider rims. 2.5" "might" be a bit wide as they are old school slicks which generally were meant for fitment to narrower rims than the same size tyre nowadays. Probably 2.15" would be a good size rim for this tyre. I see it's an ultra soft so even if it is 20 years old it'll stick to anything .
I'm not sure though, about the size rims.
