Where I live there there is a firm that does tent repairs, and they make all sorts of things from leather and canvas. Long zips - no problem!
If you don't have one of those anywhere near where you are, or even a shop that does stuff for the "horsie people", you could always take it back to the shop you bought it from and get them to get it fixed. You won't be the first to ask, I have two stuffed Spidi zips myself. (One is away for repair, the other I need here.) I'd tell you where my jacket is but it has been there for what is starting to seem rather a long time...

It depends how it's stuffed....
My one, the base is still intact just the bit you pull (tab) has snapped clean off so I just chucked on a key ring.
If you mean that your jacket is with Celtic, I can't comment on that - my personal experience has been very good, as has a number of others I know that have had repairs done by them. I've had stuff done that I thought was unrepairable and it's come back indistinguishable from the original.
The best thing is that they understand the product they are working with - many canvas repair/saddleries etc do some shocking work on motorcycle gear for that reason alone. Not saying the place you use isn't great, but worth seeking opinion on the quality of repair, particularly on an expensive jacket, even more so on a Gore-Tex type jacket.

I'm hoping mine will be good too, but I'm starting to get just a little nervous at how long it's taking. To be fair the order doesn't just involve the jacket repair, there is a new pair of jeans on order. But it is starting to seem like a long time.

Try Kerry at Motorcycle Safety Wear in St Kevins arcade on Karangahape Rd she is the beast around put an YKK zip in my Arlen Ness Jacket and it dosent even look like there was anything done to it.

Yeah, Kerrie at MSW for the win! She's done lots of work for me: mending seams, alterations, replacing zip sliders and zips, installing armour, replacing linings, taking garments in or out, etc.
reminds me - I've got a popped seam on my trou (yup - too many pies), and need the attachment zip on my jacket sewn to the pants.
... and that's what I think.
Or summat.
Or maybe not...
