    Have to agree, most of the recipes are trial and error you end up having to adjust them so that they actually turn out. Tried to make Pav following their recipe and it always failed. Found a recipe in a really old cook book of mums, the recipe is slightly different but it works.

    Best and easiest pav recipe ever - foolproof!

    Preheat oven to 210C (must be electric oven, gas cools down too quickly for this to work). Mark a bread and butter plate sized circle on baking paper and place on cold oven tray.

    3 egg whites
    1 cup sugar
    2tsps cornflour
    1 tsp vanilla essence
    1 tsp white vinegar
    4 tbsps boiling water

    Beat all ingredients together with electric mixer (I put first five ingredients in bowl first then add boiling water after I turn on the beaters) for 12 (twelve) minutes. Pile into circle marked on baking paper and smooth top and sides. Bake in oven for 6 (six) minutes. Turn oven OFF and leave in oven until completely cool.

    I've tried heaps of recipes but this is the only one that always works - ask all the tourists who have stayed here how good it is!
