Depends - in winter it's usually porridge with brown sugar and milk, and in summer it's cereal with a chopped banana.

Weekends, often it's toast - today it was toast and Vegemite - the original, not the posey iSnack2.0!

If we're away, staying at a motel or the like, then a full breakfast of eggs, sausages, bacon, tomatoes, toast and hash browns goes down well!

Oh, and tea - got to have tea!

Hmmm - last Sunday it was smoke cured bacon, scrambled eggs with truffles, toast with spicy blood orange marmalade, with a pot of ginseng oolong tea.

Quite tasty, it was.

Thick grilled ham, with lambs fry, kidney, hash browns, mushrooms that have been marinated in a white wine topped off with a couple of egg and frys. Those were the days.

Now it's bran, skim milk powder with yakkult bio and yogurt. Not the same but the gut is dissappearing.

Four slices of Vogels french toast (that's enough to absorb two eggs), fried in a heaped tablespoon of Chefade (just the right amount to be fully soaked up by the time they're cooked), covered in maple syrup.

Actually, maple-flavoured sugar syrup. The real stuff is $50/litre. Fuck that.

Do you make the hollandaise fresh every dayYes, my frenchie mate showed me. He was pretty horrified at how I modified it.. oh well. ;)

Add two egg yolks, a handful of water, and juice from (not quite) half a lemon, to a very small saucepan.

Now there are two tricks to it. As you beat the cold mixture with the whisk, notice how it foams.

Set the flame to about half size, and put the pan on the flame beat the piss out of it with a small whisk.

First trick - As you heat it, it foams MORE when it starts to cook quickly, but not until - you learn to judge when to remove it from the heat on this tell-tale foaming.

Second trick - the mixture emits a tiny puff of steam right at the point where it thickens FAST. Remove it from the heat and place it on the cold benchtop and beat it hard for ten seconds with the whisk. You can't see the puff of steam if you look at the egg mixture, you have to look elsewhere like the rim of the saucepan and detect it with your peripheral vision. Once you see it you will see what I mean.

Set the soft-cooked egg mixture aside and add salt and ground black pepper to taste. It should look like a thick sauce already, and not hard like scrambled eggs. If it won't run when it's tipped on its side, it's stuffed - start again.. its only an egg yolk.

Open a whole block of butter and cut a criss-cross 1cm pattern, 1cm deep, then flip it on its side and slice off the whole slab of 1cm by 1cm cubes, and throw the slab in the egg mixture and whisk it harrrd until the butter cubes melt into the egg mixture. Add a little heat if necessary, but it needs time more than heat to dissolve the butter. Don't stop whisking until the butter cubes are completely gone, or the butter will split.

Using a rubber spatula, scrape the edges down and pile the sauce into a little corner. Tip over runny egg on toast, bacon recommended but optional.

edit: half lemon is too much for just two egg yolks.

I alternate between:
a) 3 - 4 weetbix plus fruit plus 1 slab of home baked bread covered with butter and marmalade or jam
b) 2+ slabs of the aforementioned home baked bread

Have to gym 3 times a week and run ~25kms a week to manage the calories from it though :laugh:

Now thats better, just gotta lose the toast, and it's perfect, no calories, quick and easy, and keeps ya going through to about 9:30 :woohoo:

Today it was scallops, prawns, gurnard and bubbly.
Often have a salmon steak on w/e's, other times some sossies and bacon from the local (read 'real') butcher and not so long ago it was venison steak with associated trimmings.

Life is too short to eat crap food.
