now that I have picked up a GB400 with out the engine in it its in bits of boxes minus the bottom end what should I put in there open to sujestions as I know you lot would have a few

No,that's two single cylinders.....
single is fine.....try suzuki...they make a nice 500...or 600? single......but eventually you will want a pair......which will be really nice for a while but then you will want more.....asometimes you will have more then one and make sure they never meet....you know..on the other side.....like a BMW.....or...umm. a goldwing
