I love centre stands, they allow me to take my bike to redline in top gear without getting any speeding tickets, wicked!
When I had the GN I had to struggle to get it on the center stand, bugger using one with the V, use a paddock stand.

Mate, centre stands are great, if the lift your rear wheel off the ground all the better, you can remove your rear wheel no problems, oil your chain, do all sorts of stuff you cant do with side stands.
Plus you can wait the rear and do all the service work on the front wheel.
After you have one you wonder why they are not on every bike. I comes down to weight and cost. They weigh a couple of kilos? that why sports bikes dont have them.
Of course a bike will be more stable on a side stand simple physics it has 3 points of contact with ground (like a Tripod) instead of two.
Apart from a bloody E/quake and a 100km/hr wellington gale, a centrestand is a better bet
