cooneyr has listed the myrides site which is the main one I look at for Trail Ride info.
I run the DR650 tyres at 20 to 22 psi both ends for just about everything, sometimes 25in the rear for seal with a load.
Mud might tempt me to lower them closer to 15 to 18psi but I'd be careful on rocks at that pressure and stop to pump them up again before getting to far back on the road .
My CRF230 which a dedicated off roader and a much lighter bike usually has 10 to 14psi in it with rim locks and of course never gets used on the seal as it's got no plate etc.

14/47 is good for trail riding. I found 14/41 the best for Adventure stuff. Still a bit revvy at 100km, but would sit there all day, and still low enough geared to get most places offroad.
I'd run 15/41 occasionally, but found the engine lugging, and wasn't as responsive.

Mentioning the larger tank... second hand is the only way you will get one for a good price. I paid the price for new and went through justgastanks.com but worth every penny.
Racks for the back or Pannier bag frames to keep em off the pipes and get the weight low... may be similar issue finding cheap but some here have made their own or had them made instead of getting the ventura or what ever other stuff.

Awesome vidwish I could just get on and ride like that! Having alot of fun on the drz400 at mo riding up the river beds on way to and from work..well is a bit of a detour via the scenic route
also hunting out every gravel road I can find..lovin it!
A KTM is definatley on the list so I can do this ....Don't think the drz would cut it with this lot..lol..

wondering if anyone wanted to trade services...
I am really keen to improve my off road riding skills..so I am looking for someone well versed in this area who could offer me tips, pointers and techniques etc.. while out trying them...
In return I could offer either beer of your choiceor road riding skills (been riding road bikes for 12+years, as well as 3 seasons racing GP bike)..or for the adventurous type..I am an outdoor instructor and can show you how to rock climb, abseil, flat/white water/sea kayak or show some bush survival skills/tramping..
I am in the mighty Timaru area..but could travel a wee way..Anyone interested please give me a yell...
