You should always write some sort of "sale and purchase agreement" and both parties sign it and date it when the money and the item changes hands. It doesn't matter at all what it's written on. Just a sheet of photocopier paper will be good. Write it out by hand if necessary.
All it needs to say is that he agrees to sell you this item and you agree to purchase it, and whatever details you want to describe, such as a full description of the item including his representation of it, ie "good running condition."
This will be your record of actual ownership change. The NZTA record is for administrative purposes and does not show anything at all about your purchase of it.
