After landing face first on a dirt road on the TAT there is NO WAY I would use an open face helmet.
For road and gravel touring hard panniers are the go, unless you crash. They are easier to get stuff in and out of and are better for security. BUT, if you are doing more offroad stuff then soft panniers are better. They are lighter, will move around and won't bend or break off in a crash and won't brake your leg if you get it hooked underneath. Colebatch has put a lot of development into his panniers and for another overseas trip I would be looking closely at them. Get the weight forward and low.
