I struggled to find the "user" manual as well, but I did find a service manual for the 2000-2007 DRZ400 (not motard though) in PDF format, got some useful info in it but not everything ... it's a little large at 114MB but I can upload it to a sharing site if you want to grab a copy.
What info are you after ? (I can't help if it's to do with the console as I have a Trail Tech replacement on mine) but as a rough over view the peddle on the left is the gears, the one of the right is brake, and the twisty thing under your right hand is the go faster bit ;-)

I've also seen that some people disconnect something on there to enable them to start in neutral without having to pull the clutch in? Pretty embarrassing, I was showing someone my new "beast" and it wouldn't start, then pulled the clutch in and away she goes!
I guess I'm mostly also after stuff like oil changes, just want to read up really and familiarise myself.
Also what fuel do you put in your drz??

Have a factory workshop manual as well for a 400E, not sure how much different a 400SM is though.

So your bike will start with the clutch in and in gear but not when the clutch is out and in Neutral?

I personally like the idea of having to pull in the clutch to start .. it nothing else it'll stop that horrible crunching noise if you try to start it while it's in gear

Loads of good stuff in there! Even I learnt how to change the oil on mine form them .. who'd have thought there are two oil drain plus on the DR-Z
Also another smaller DR-Z community is here ... not as busy as TT but focused only on DR-Z with some knowledgeable people.
The DR-Z400SM in stock form should be fed 92octane .. start upping the compression on it you might want to look at 95, but 92 is fine ... my bike is only mildly tweaked (3x3 airbox mod, sports/noisy exhaust and K & N filter) so I tend to put in 95 (but to be honest I'm probably wasting money and should stick with 92!)

Just do what I did when I got the R6, play with the dash until you figure out how it works, it's not like you can break it, my DR650 was a bit more complicated (it's got a trailtech dash) but even then I didn't consult the manual until I changed wheels and needed to reconfigure the speedo.
My DR is the same with the clutch and stand safety stuff, you get used to it and it doesn't worry me anymore, some people remove the stand switch because they claim the stand can come down while riding and cut the engine but I have bottomed out my suspension a couple of times and haven't had a problem with it so I wouldn't bother, and given your recent experience with dirt bikes and the fact you bought the SM I wouldn't think you'd be doing much off road so I would leave it.
A far as oil changes, it's all pretty obvious, drain plug on the bottom, filter in the side (requiring 3 bolts to remove).
Just run regular (91) gas, there is no benefit to running higher octane fuel anyway so why waste the money
There are a few buttons on the drz dash and it's not really intuitive, kind of need a manual to make any sense of them really, the only ones I've got sussed without the manual so far is resetting the clock and trip meter......
What's the compression ratio of the SM? I'm pretty sure the manual for my E recommends high octane rather than regular, not sure if the engine is the same beast though.
As above, there is a procedure for the oil change being a dry sump motor
