Your best trick is to form a relationship with a shop, get to know the guys, get to know the shop etc. Fact is, you will get better service, they will help more, slipping in urgent jobs etc.
In return, the shops value their valuable clients, and lets face it. Your bike is usually your baby. I feel its essential to trust the mechs, after all, its your life in their hands.
Sarge, Mt Eden do have a login, and looking to become more regular on here, but are simply to busy to deal with it at the mo. My bike is serviced by Mt Eden, and they lend me loaners if I need them. In return, I try to make servicing my bike easier, by giving them warning, booking in advance, little things to help them.
You are naturally welcome to play the shops for best price, but it doesn't breed loyalty, or, long term, best price. I will admit to using several shops for different things (servicing, accessories, tyres), but its because I like them, so try to spread my $$$ among the few I like.

As an out of towner and only a very occassional visitor to Auckland, I have had experiences with 2 of the 3 shops you mention.
Colemans? Well I can't say enough about them. I purchased a bike from them (many years ago) and found that they were top notch. Sales people were knowledgeable and didn't try to bullshit. Parts were extremely helpful, and when the bike had a gear shift problem 4 - 5 months after I bought it they repaired it imediately.
Mt Eden? Not to be trusted. As a winner of a motorcycling event in Auckland (also many years ago), one of the prizes was a voucher for goods or services from Mt Eden Motorcycles. As I lived in the South Island I couldn't just pop around to their shop in person, so I rang them and discussed how I could use this voucher. They agreed that I could pass the voucher on to my brother who would be in Auclaknd around 9 months later, and he could pick up some accessories to the value of the voucher at that time. However when my brother arrived at the shop he was told that as the voucher was more than 3 months old it had expired and was worthless. Maybe they have changed, but as far as I am concerned, don't trust them.

Recomend Mt Eden. Mike and his staff are great, even when I'm being an idiot and getting my right and left mixed up. Bookings are needed, and I recoment you book in advance.
Speed limits are just a suggestion, like pants.
