As mentioned earlier, Total Control by Lee Parks is an excellent book. It'll probably make more sense after you've had a bit of time in the saddle though. The Keith Code books come highly reccomended as well, mainly Twist of the Wrist II. It's a bit more track/hoon oriented though, although his discussion of survival reactions is quite good.

Good on ya for seeking a mentor, but really once someone has showed you the basics I think you just need to do a bit of riding by yourself - at your own pace and well inside your comfort zone. Don't push it too hard too soon.

Get out and practice. Take what you read and pick up from group rides, think about it when it's raining, then do it when it's not.

Go at your own pace. I bought my bike at TSS too (fergus good bugger) and my first ride (other than many short test rides) was over the takas back to Masterton. Took my time, kept my eyes wide open, slowed down BEFORE every corner and putted home. Wasn't very fast, but had a blast
