Std MX brakes are ok for a novice but I wouldn't be keeping them on for any serious work! We were playing with some twin brake set ups in WSC but jury is still out on them, were also using 300/310 and 320 front rotors. If your wanting decent brakes then Moto Master has some entry level units for conversions or you can go straight to their top competition models.
Alloys are starting to be used more but ex road bike wheels can be a bit dodgy. Also alloys and carbons have a tendency to break. Alpina's are tubeless but expensive, most are running them or a top billet/spoke wheel. A few in Europe were trying the carbons, but again reliability is still an issue.

And how easy is it to swap back and forth between dirt and road wheels?
I use a set of mags off a GSXR250 i believe. I needed an engineering outfit (GJS in Dunedin) to fit them. I would be helpfull if you measure up everything first so you get the closest fit without too much machining and adapting, you can get around axle diameters with differnet bearings. The wheels I use have disks already mounted though apparantely machining down a 300mm floating disk to 290mm is a bit of a bastard of a job. Front takes 10 mins to change and the back is getting quicker but still takes about 30 mins for me, allow half that time for someone who knows what they are doing.

I have yet to fit a speedo though but they can be got for 17 in wheels for about $200.
Cost was about $700 plus tyres.
