    I was looking at the carburettor, and the choke looks like it would be a huge restriction... Should I remove it for maximum performance?

    I don't actually use it, or would this make it a bitch to ride in the winter?

    Nope leave it there, carb should be fine with it as its designed to be there. Take it out and you'll probably stuff things up.
