Pack racks - Where?

Where would I get a pack rack for a 2001 GSXR 1K?

Start with your local dealer - they should be able to get them in.
Henderson Motorcycles sourced one from the distributor for me.

The distributor has the brackets and rack in stock, so as Mully says, just about any bike shop should be able to get them in for you.

i normally just buy one or trademe and modify to suit bike last ventura i got was 15 buck and spent 30 mins modifying it

I'm sure they could direct you to a preferred dealer in your vicinity, though most decent bike shops run accounts with the (local - yay!) manufacturer.
