The whole Classic Bike theory is a bit difficult for me to comprehend.
I put it down to folks reviving their early riding experiences, discarding the frustrating/annoying parts of it. Polishing the memories with embellishments of great moments in time, and selling it on for more than it is worth.
Fortunately, their are naive buyers that will buy into it.
The closest I can get to appreciating some bikes of past era's, were their styling, and the cacophony of noise, and aroma's that the machines made.
Sort of like what anorak wearing train spotters experience, as ol steam trains hiss and spew wood smoke into the atmosphere.
Occasionally a ride on a great road, in perfect conditions, with good mates and wine, women, and song would get you close to a classic time. But the rest was just riding. (which is still a great way to go through life).

A mate had a 750k when we were younger, I used to take that out when he got his gpz, nice bikes handled well.
