    which website? Google suggests http://www.amcc.co.nz/

*EDIT All I can find on that page is a link to a PDF which has a bunch of rules about the day. Where can I find what will be taught? Is it a glorified track day? Will there be classes? Which group should I choose? some many questions so little time.

Yep their website is a bit crap eh.

It is pretty much a trackday with roving instructors that will lead/follow you if you ask, and then discuss between sessions. It's pretty informal, if you want help with something in particular, just ask. Chief instructors are Paul Pav and Vince Sharpe I think. Also an optional theory session on the thursday night prior, at the clubrooms in Ellerslie.
If you don't want instruction you can treat it as a normal trackday.

Also a lot safer as they put out the bales etc.

Just choose the group you think will be right for you or ask. If you find it's not the right one for you just change.
